The Pampa Multipurpose Knife is based on the Japanese Santoku which in Japanese means "three virtues" for its ability deftly cut through meat, fish, and veggies.

Blade:

The blade is made of Swedish Sandvik Stainless Steel which is highly coveted in the knife-making world. It is renowned for its excellent corrosion resistance, high hardness, and outstanding edge retention, making it very easy to maintain.

Handle:

This model features an olive wood handle known for its unique, irregular grain patterns, and its rich coloring, making it one of our favorites. Other available handles include Purple Heart and Guayubira.

Tang: Hidden

Length (Blade/Full Knife): 7in / 13in

Thickness: 0.1in

Case: Heavy Duck Canvas

  • We use a 2.0mm 14C28N Sandvik for our small and mid-sized knives (Pampa, Noa, Enojito and Sting). The Rockwell hardness from the last test was 62.
  • We use a 2.5mm 12C27 Sandvik for our heftier blades (Furia, Pez, Pan, and Chiquito). The Rockwell hardness from the last test was 59.
  • All blades are hand-sharpened, but we aim for a sharpening angle of 18 to 19 degrees.
  • Hand-wash only. Dry off after washing.
  • Do not use on surfaces that are harder than the blade itself.

Great feel

The handle and weight of the blade feels great in my hand, hefty but controllable. The edge came very sharp, though had minor edge angle inconsistencies along the primary bevel. I was able to clean up the edge with a few passes on a 2000 grit stone and then leather, now it's like a razor.

The knife is well balanced and fits well in the hand. The blade does have forge marks which adds character to the knife...it was unexpected, even though the photos clearly show the marks. I chose to use a little polish to achieve the finish i desired. I am very pleased with the purchase of this knife.

Very high quality knives.

The three knives I’ve ordered from Fields Outfitting are the best knives I’ve ever bought. The blade is hard and sharp, keeps its edge after much use, and the wooden handle is easy and safe to grasp. It is also well balanced. The weight of the blade alone is almost all the pressure you need for a clean cut.
