Based on the Japanese Yanagiba sashimi knife, Pez is engineered specifically for fileting cuts of fish. Sometimes referred to as "a sushi knife", it is long, thin, and razor-sharp.

Blade:

The blade is made of Swedish Sandvik Stainless Steel which is highly coveted in the knife-making world. It is renowned for its excellent corrosion resistance, high hardness, and outstanding edge retention, making it very easy to maintain.

Handle:

This model features a Guayubira base with a lighter Ash separator. Guayubira is native to the triple-border region of Argentina, Paraguay, and Brazil. It is known for its distinguished chocolate color with streaks of yellowish-white. Other available handles include Purple Heart and Olive.
