The term petty knife comes from the French "petit" which aptly describes this new model. Measuring in at 10 inches, with a 5.3-inch blade, Jane is our smallest knife by far.
Many chefs consider the Petty to be one of the most useful knives in their arsenal second only to the Gyuto Chef Knife due to its precision and maneuverability.
Blade:
The blade is made of Swedish Sandvik Stainless Steel which is highly coveted in the knife-making world. It is renowned for its excellent corrosion resistance, high hardness, and outstanding edge retention, making it very easy to maintain.
Handle:
This model features an olive wood handle known for its unique, irregular grain patterns, and its rich coloring, making it one of our favorites. Other available handles include Purple Heart and Guayubira.
