Horacio with Palo Santo Handle
Horacio is Ramo Filos' take on the Japanese Honesuki which was originally created as a poultry butchering knife. It translates quite literally to "bone knife" and is a must-have for anyone who enjoys preparing a whole chicken or turkey. The fine, angled tip makes it ideal for maneuvering those tricky cuts. This model features a Palo Santo handle.
Palo santo grows on the Pacific coast of South America. It is both a beautiful and culturally significant wood often used by healers to this day for therapeutic properties found in its smoke and oil.

I am constantly chopping bunches of veggies, and this knife is perfect. It is a great knife. It fits in my hand perfectly; I have been using this knife for years. It is very sharp and makes quick work of slicing and dicing. I will buy more knives when I have extra money to spend on myself.

Got my Gustavo and immediately hit the kitchen to dice some things up. What a great, well balanced knife. Cuts with ease and the walnut handle fits cozy in my hand. Also, there was a nice hand written letter from the owner which I thought was nice.
