Horacio with Guayacan and Blackberry Handle
Horacio is Ramo Filos' take on the Japanese Honesuki which was originally created as a poultry butchering knife. It translates quite literally to "bone knife" and is a must-have for anyone who enjoys preparing a whole chicken or turkey. The fine, angled tip makes it ideal for maneuvering those tricky cuts. This particular model features a Guayacan handle.
Guayacan is a hardwood native to the northern coast of South America. It is characterized by its strength, toughness and density.

I am constantly chopping bunches of veggies, and this knife is perfect. It is a great knife. It fits in my hand perfectly; I have been using this knife for years. It is very sharp and makes quick work of slicing and dicing. I will buy more knives when I have extra money to spend on myself.
